Step 1: In a medium bowl, add the yogurt of your choice and kosher salt. Mix well to incorporate the salt.

Step 2: Transfer the salted yogurt to the cheese cloth.

Step 3. Cover the yogurt with the cheesecloth overhang. Set the bowl in the refrigerator overnight.
